An old Puma White Hunter that my grandfather and father used before me. It takes a lot of heat from "experts" but the balance and feel is the best I've held. It also holds an edge quite well.
I just bought the new Buck Gen 5 for skinning, I heard great things about it and figured I would give it a try.
I have a Buck 119 for hacking at stuff, and usually have another folder too Gerber Gator or Buck 110.
Always carry two knifes while hunting, boths blades are of very hard metal which hold the edge, not stainless, which only requirer sharpening once every hunting season.
One Buck knife # 0119BKS-B with rubberized handle, no longer produced.
One Gerber folding knife with an extra, stainless steel exchange blade as well as an extremely sharp saw blade. No longer in production.

My Puma is a jaeger meister folder.
Those go in my huntign stuff.
At home for skinning and butchering I use Two Russels, or two kershaws.
I also use Gerbers occasionally, but mostly the Russels.

The ones I use were made in 1958 and a 1962 , before the buy out of Grohamann, not that I don't have a few of them also, but I use the Russels, mainly.

Old timer folder and a Pukko I imported from Finland. It is the traditional style of the Same reindeer herders. I also have a hawk style belt axe made in sweden.
Grohmann large skinner for big critters like elk.
Russel belt knife, for birds and deer.
Lapp Puuko for general camp use.
Large Victorinox folder with lock blade and saw for general camping/survival kit.
Wetterlings hatchet for heavy work.
Gerber exchange-a-blade saw for splitting carcasses and cutting tree limbs
Browning ultra light fixed blade for backpacking
Shrade 8" teflon / stainless fillet knife for fish
Hand built 6" SS Mora blade for which I built an elk antler handle and leather sheath for deboning and butchering.
Browning caping/skinning knife.
Custom 6" straight blade, flexible deboning knife if I'm traveling light, or
Henkels 6-knife set in a roll up case for serious meat processing.
That's a few of them anyway.
Oh - and I don't feel dressed unless I have a Swiss army knife in my pants pocket or Leatherman wave on my belt.
I have a Buck Vanguard it is a good knife for the $, but I don't like the gap between the blade and tang when skinning moose, the hide always gets caught there. It is only 420hc steel but must be hardened and tempered perfectly as it holds an edge better than it should.
I also have a kershaw folder of some kind in 440c and a Grohmann mini skinner which I like for doing bears.
My butcher knife is and "Ontario knife" made in the USA that I bought at the grocery store.
I carry a leatherman multi tool at all times , a leatherman folding pocket knife , most of the time and when hunting , oddly enough an outdoor edge Kodi-pak (lifetime warranty) and actually not a bad hunting knife set. complete with leather sheath(choice of nylon or leather) I was pleasantly surprised as to how well it holds the edge. i got the game processor for xmas one year from the wife and was impressed enough to buy the kodi-pak. for the cost (125$ ) it's nice i really like it
I carry either a Schrade Old Timer or Buck 110 on my belt. They are very sharp and great for skinning. The Buck 110 has been with me for over 30 years while the Schrade has been around for the last 15 yr.
I also have a SOG Seal Pup in my backpack as a backup.

I have one of those too, and it feels great. Lately I feel it's just too big for a hunting knife and hangs down too low and gets hung up on crap. And in retrospect, I should have bought the rubber handled one.

In my back pack I have a spare. Just a cheap Canadian Tire job in case something happens, like walking out of the house with out my main knife. Not that something like that has ever happened before.
