Which 1911 is most reliable/affordable?

Affordable, 500 to 1000 dollars will get you something good. Find what fits you, and your need, cheaper to get a gun close to what you want to end with then pay and hope you get the right part to make it what you want.
Adjustable sights are good. NORC are OK but will always be a NORC even with 1000 dollars dumped into them.
 
Ive been researching alot and when I came across Kimber ive heard theyre extremely overpriced and come with real ####ty mags... Looking at a springfield now and a para.ord... Any other recommendations?

Pick one! Most of 'em from reputable dealers will shoot reliably - even those Norcs. The prices start going up when you start adding farkles, exotic materials of construction and custom enhancements. You are effectively caught on the horns of the same problem I had years ago: sure the cheaper alloy frame guns can and will shoot as well as the heavier and more expensive steel guns - but they won't hold up as well over time and have shorter effective service lives. There is nothing - and I mean nothing - more dreary than scrapping a much loved, deadly accurate gun that has finally been shot out and worn beyond economical repair. If you are getting into the game for the long term - bite the bullet, buy a higher end gun and look hard at the used gun racks. There is a metric TONNE of great bargains to be had there more often than not.
