Which of these rifles would you take hunting?

The moose'n nagant seems the obvious choice for me at least. MFS 204 grain bullets always shot well from my cut down mosin.
 
I'm not sure where you hunt, but here on the Prairie shooting a mule deer at times is about equal to shooting the neighbours dog. I shot mine last year with a rifle at about 50 yards as it stared at me. My 9.3x57 did the job, but so would have a 30-30 or a 357 magnum.

Dumber than dirt; that is your average Mule deer. They are most definitely not possessing survival instincts like a WT.
Walk towards them to close the distance...their head comes up...freeze....they look a moment or 5...continue their grazing...repeat.
Don't work on the Prairie, but in the creek brush...back straps for supper.
And I'd go for the M44 personally. Shot a few with a Mosin 91/30...M44, instant hearing damage IMO.
A Lee Loader in 7.62 x 54 to get a good hunting load would be a plan ( based on the OP's description...reloading is not a likely hobby, guessing here )
 
And not one of those 20 year old kids had a choice of what rifle to take with them. There are about 600 better tools for the job than what the OP has in his closet. Pick one. Any one.
My point is they hauled them around for god only knows how long and you can't carry it for a few hours in far better conditions? Cmon "big"ugly man, they're not that heavy. If you can't haul around an extra 3 pounds you probably can't haul out your game.
