who butchers your deer?

Here's one I did a couple of years ago, I think I got most of the meat!:D

We do the butchering at the end of the week. Everything is hung to season, and then we get the work done on Saturday or Sunday. Many hands make light work, just like an assembly line.
 
The local butcher will "cut and wrap" a skinned deer for around $50.00 so I couldn't be bothered. After that I make my own sausage at home.
 
I do my own. As others have stated, it only takes a few hours to completely de-bone and de-fat an average deer. That includes grinding the burger and wrapping. I double freezer-bag all my meat, making sure there is absolutely no air in the bags. No bone/fat and no air and you can enjoy the deer meat for 2+years without it getting that gamey taste.

And there's no doubt what-so-ever that the meat in the freezer is from your animal
 
Having worked as a retail meatcutter for over 20yrs, I was always thankful for auto-mechanics, cuz it gave the general public someone to dislike more than me. :D

I also totally de-bone, & de-fat the entire deer. Makes a much nicer product in the long run. Also, all the fat is removed from the grinds and is substituted with pork.
