Who does or how to cut foam for gun case...

Alternatively pick and pluck foam works well for those who do not want to put in the effort to cut foam well:

or you can freeze it and use a bread knife. Hot wire does work best though.
 
Well to cut foam properly you need something called a hot wire if you look in the phone book for sign shops find one that does stirofoam letters they will have a hot wire its old school but it works great hope this helps
 
Electric bread knife and some chalk is all you need. Lay your items on the foam out, trace around them with the chalk. Cut the foam slowly in a vertical motion and cut about 1/4" inside the chalk lines.

I have done half a dozen Pelican cases and they have all turned out professional looking.

Taking your time and planning is the biggest challenge.
 
If you're going with pelican, see if you can upgrade to the pick and pluck foam. may be a bit more coin, but for the most part you can peel it out and make it look pretty good on your own
 
The perfect use for the douchey electric carving knife that your wife made you buy. In fact, it's the only acceptable reason to own such a monstrosity (electric knife). To use such a thing to cut meat is indicative of bad, bad things deep in your psyche.
 
1) Chalk or highlighter (latters appears dark, but you aren't blind you're good to go).
2) Extremely sharp kitchen knife.
3) Pissed off wife.
4) Profit.
