I used to have a Hungarian Vizsla and let me tell you thats a true hunting dog. I trained this dog to do everything short of writing a novel, seriously, this dog would track, point, retrieve, go on hand signals, climb trees, speak(limited vocabulary), gaurd... This really was the ULTIMATE dog and friend. Unbelievabley obedeint at home and a serious hunter in the field.
In regards to your question about training I would recommend the NAVHDA training manual. The North American Versitile Hunting Dog Association is basically a club for this type of breed( pointers, setters, spaniels...) and their hand book is quite simple to use but very effective.
Which ever breed you decide to go with do yourself a favour and be very diligent and firm with your training for at least the first year to year and a half, you will thank yourself later.
