why are over and unders so expensive?

Its the difference of buying a handmade watch or one from Sears. Lots of parts, pieces, counterweights and springs, all with fine tolerances. The handmade watch will still operate six generations later, the Sears watch will operate for 5 or 6 years. O/U and Side by Side shotguns are the same. Stay away from anything under 2000 bucks. It will never last.

25 years ago my colleagues and myself were into sporting clays and pheasant hunting. Every one of the Berettas, Rugers, Brownings, or better are still in service with little or no repairs. The thousand dollar specials have been long disposed of a decade ago.

To be fair, I bought a Timex Ironman at Zellers more than 12 years ago for $100 and other than changing the battery last year (first battery change ever) the thing is still running like new. By comparison I also have a Rolex GMT Master II (which retails somewhere around $8K). It too runs like a top. They both have their place in the world and one is better made than the other, but I'm completely satisfied with both.

That said, I have handled cheap O/U guns and wouldn't spend the $500 they want for it and literally run out of the Calgary gunshow carrying a beautiful pre-war Superposed that I stole for $1200. Quality guns are worth the stretch.

Are there any quality entry level side by sides or are they all high dollar investments

It depends on what you figure dollar wise as entry level related to quality. If you are thinking the $500.00-$700.00 dollar range, save your money. I had a CZ Ringneck and it was a fair gun for the price but it was no fine, well balanced double. A lot of others who have the CZ's like them. Down in the US, last year you could get a new Smith & Wessen Gold Elite on sale for somewhere around $1000.00 because they were being discontinued. But that was down there, not here. However, you can find some quality, used side by sides for a decent price.
