I can't believe the number of times I've read on hunting web sites that a guy has shot a bear and is looking forward to having it made into pepperoni.

Do people really eat that much pepperoni?

In my opinion it's a waste of perfectly good bear meat.

What's wrong with roasts, ribs, burger and stew?

Maybe they don't know how to care for bear meat and they have to have it processed with a pile of spices before they can eat it.

Or maybe they can't cook.

or maybe they just enjoy pepperoni. Same can be said why guys get a deer done entirely in sausage.
I gave away my entire bear this spring to guys at camp, not a big fan of the meat.

The pepperoni could be dog treats as well buddy. ;)

My germ shep LOVES bear and moose meat.

While I haven't hunted anything yet, I am a pretty good cook and a huge fan of dried meats. Having been to a few eastern European countries, the delis are by far my favourite destinations.

I personally can't wait to experiment with various flavour combinations for dried sausages, smoked sausages, etc. That's not to say I can't have fun with a venison roast that's been rubbed down with cumin, salt, dry mustard, thyme, and then slow roasted in red wine with onions and garlic. Ah, delicious animals.

I ended up with 20 something pounds of goose pepperettes this year :p
I ate the last pack in February. Yes, I love pepperoni, you might as well start calling me Ricky.

'Cause it tastes better that way. We do whole deer into sausages and pepperettes too because it's more likely to get used faster as the whole family enjoys it. Some people are picky about the taste of steaks and roasts but everyone loves game sausages and pepperoni etc.

Less waste left in the freezer.

all mine in sasuage. packins into my work lunches better

We turn a few hundred pounds of honkers into pepperonis. They are great for all kind of things. Eat them while you are out fishing and hunting in place of cold cuts, having it 0n hand at home makes it convenient.

You can also take it camping and cut it up and cook it into your KD and such.
