I usually take them out after dressing for that, "trophy treat" as a snack the first chance I get after a kill. This year I took only a small portion from my elk for the snack and left the rest to be cut out after hanging.

How many of you do the same....tenderloins as the first meal from your kill.....fresh!
 
I like to eat them fresh.

Deer tenderloins--------> I partially freeze them, and slice VERY thin with a steak knife and stir fry :mrgreen:

I made two meals outta my moose from only one tender loin,fried in butter served with whole mushrooms,onions and red pepper.I'm gonna cut the remainder TL out tonite.
Last year Gilly and I feasted on FRESH elk & whitetail loins,#### me Freddy they were GOOD :wink:
Thanksgiving is a 'GO' Gilly :D

I leave the loins on all harvested animals, I like 1 1/2" thick T-bones with the tenderloin attached. Even the heart I don't like to eat right away, needs a few days to break down a bit, but the liver is fair game right away!
