Okay :) , so apparently people work their milsurp bolt-actions differently than I do....:p...

Depends on the action in question.

For most Mauser style bolts, as well as my Enfields, I use overhand.

For my Mosin, underhand, as the handle is farther forward and takes some effort to get it going.
 
At the bench

My only "bolt" gun is a Mosin...I use the palm of my hand to work it

At the bench, i work the bolt with the left hand side resting atop the action just forward of the lever, grabbing the underside of the bolt with the fingers and getting leverage with the wrist twisting the bolt open and flicking it rearward briskly.
The right hand never lets go of the grip and my face stays on the comb.
Bolt knob stops just clear of my nose tip.
Closing is very fast, more of a forward-downward slap to the bolt, as the Mosin bolt is a ####-on-opening type and offers no resistance on the feeding/closing cycle.

Underhand my Mausers, Mosins and Enfields.

I overhand on my M95M though as underhand gets really difficult with operating that bolt.
 
Cup my hand, ball of bolt rotates in my hand without grasping anything. Using this method you can fire your Enfield/Mauser/MN lightning fast.
 
I voted "Some combination of the above two forms." I don't have a milsurp bolt action, only an R700, and I've never really needed to throw the bolt that fast.

I have seen a guy use a rubber mallet, but he was an older gentleman so it was understandable.
 
Im a palmer, open with mid betwen palm and pinky, the push shut with ball below my thumb, some say its not correct, but works for me.

This is what I do also. I put underhand as that is the way I start the motion. On my Enfield (most used bolt action) I find its easiest for me to underhanded open it then pivot the bolthead in my hand to an overhand close posture. If that made any sense to anyone other than myself.
