Sure it would make a good varmit gun, but being an AR-15 it would be restricted and no permitted for hunting

If you want a 17HMR for field use, check out savages bolt guns. I have the 17BRJ and love it (well, it's my wife's gun but she let's me use it).

I also asked about 6.5mm parts and was told they'll only bring in .50 Beowulf stuff. Not sure why.

Only if there happen to be varmints running around your local range. This is an AR15 and thus restricted.
