I agree with Gibbs, 6.5x55 is enough rifle and recoil is not bad, more push then a punch.
I think you can get Tikka T3 in this caliber or older Swedish imports.
 
what kind of hunting will you be doing? If its brushy i'd pack a 30-30 lever, probably from Marlin (a 45/70 would be better, sure.. but not for your lady friend) and if not then a light cartridge like a .243/25-06 or even a 7mm if you reload.

Personally, for me it'd be in a laminated stainless t3 or a new ruger.
 
I'd say give the cutie a Swiss arms "smurf special" with lots of gizmos attatched. And those 5.56 rounds will make the PETA guys scream and thrash and scream some more before they die a good while later, which will freak out all their buddies, just like the 5.56 was intended to do.
 
how 'bout a Rem. 700 buckmasters youth model in .243 ,7lbs., barrel length is 20" and stock 1" shorter. you sure this chick likes to hunt? you are taking her into the bush to hunt, right? Okay i'll believe you , but thousands wouldn't.
