Serioulsy though, beaver is fantastic. Cut in strips and stir fried its possibly the most tender thing you will ever eat.
Being an easterner, I have never tired elk but I would love to. So, moose is the winner out here. Grouse is great too... I had two last night and want to save the last three in the freezer for a while longer.
Bison er bison liver is the best cooked fresh with a bottle of beer. Hmmm my fav. Next is white tail and moose or mulie . But did i mention bison hmmmm.
i really like bear and i have grown fond of duck as well moose is better than beef any day but when venison is good it is the very best i am blessed to be living in an area with alot of deer that feed on corn and soy and clover and the meat is second to none. my wife uses it in a vietnamese soup called pho and it is magic if you aren't feeling 100%.
I've had venison and some bear garlic sausage in the distant past that were damned good, and more recently a terrific moose roast. Couldn't tell you which I liked better, and I haven't tried anything else.
