Are you old enough to remember Rat Patrol. 4 guys 2 jeeps and big mounted guns and lots of sand dunes to jump.
I'm old enough to remember the reruns! Loved that show! In fact I just watched a couple of episodes of it a few weeks ago on the "firestick".... Ode to the days of action television shows with masculine heroes and not bearded lampoonistic renditions of cartoon women seeking to read bedtime stories to your children!!!
History Channel used to have Rat Patrol, Combat and Tour of Duty marathons in the late 90's back before all the reality crap... I used to eat those up as a kid, got me into guns and everything military.
As for the Jeep/truck gun, I think a shotgun with a variety of shells is ideal. To me a scoped centerfire rifle is too specific for what I consider to be a "do-it-all" tool.

I've had shotguns and .22 rimfires with me more often when creeping along logging roads and side cuts.
I grew up watching all those shows along with all the fun western stuff.

That scope needs to be higher above your bore... 
Give it a go and see if it works for you. I am slightly interested if it holds zero after a year of driving around. But a soft case and locktite probably will do the job better than a guy thinks I just prefer my truck guns to only have iron sights
Sorry. but I don't see one thing I like about that rifle. The gun is ugly, the scope mount is "iffy", the bipod is heavy and cumbersome, the mag makes it hard to carry at that location, not to mention the brake.
You would have been far better off to buy a 760 in 308 cut the bbl to 20" and mount a low powered scope on that.

The backwards mount looks goofy but that mount is good and solid as long as the rail is good and solidly attached. The comb may be too high to properly use irons but may work in a pinch. The magazine is a great carrying handle. I would probably leave the bipod unattached in the jeep as any shooting you may do to use a bipod you will have time to attach it. Bipods snag on many gun cases if you are trying to pull the rifle straight out.
It's unconventional but should work fine. Only using it will let you know if it works to your satisfaction.

I don't think I've ever seen someone in BC use a fuddtastic rifle like that for hunting or a truck gun We use bolt actions and scopes mostly.
