The above is the 8x57 doing it but the 30-06 with similar loads with the same powder's will do pretty much the same. Remington Jim can testify more about Re 17 and the 06.

Yeah I just realized that’s an 8x57 but yeah I’m sure you can get some good numbers in the 06 as well
For your needs either will work. People here use both for moose and deer. It is the go to calibers. What has the best price and availability for ammo, is prob your only question
Get one of each.. problem solved 
Then.. when you’ve done that, add in a 7-08 and 270 (to cover off the SA/LA aspect respectively) in the mix just to make matters/decisions on which one to use worse (or better)…

Have you considered a .270 for smaller game and a .300wm for bigger game?
.270 is such a joy to shoot. It's an absolute laser beam of a cartridge.
If you just want a good do-all budget option, .308 is the way to go. I love my .308, but the .270 is amazing.

Does the 308 push 165’s 2900 fps? Because that’s where I’m at with the 30-06.
Few years back Hornady sold something called, hmm, light magnum" ammo I think it was called. So yes, apparently it is doable with some sort of arcane powder. - dan

Interesting note, a friend once pulled the bullet on one of those light magnums, the same powder couldn't fit back into the case!
All kinds speculation was offered on just how they originally they got it in there!

I don't understand some of the discourse... Yes, you can load a case with larger capacity to achieve higher velocities...
Hypotheticals for you:
-What bullet do you want to shoot?
-At what distance do you want to hunt?
-Does a given cartridge propel the bullet at a high enough speed to achieve proper expansion at that distance?
Mechanically, I am skeptical you will find much difference in accuracy between a 308 and a 30-06. Maybe you can shoot the lower recoil one better, maybe you aren't recoil sensitive.
I find 308 is near the threshold of recoil for what I find enjoyable to shoot often or in volume. More isn't always better, or there would be a lot more 300 RUM's, etc. My hunting load for 300WM is a 165gr CX at around 3075 FPS. its good to 500 yards+ which is more then I am likely to ever take a shot on an animal at. Almost all my hunting has been 150 yards or closer. At which distance the 308 win could shoot the exact same bullet and perform completely fine.
So all this to say that either would work. Ammo shortages aren't really an issue if you stock properly. Buy a rifle, Buy 3+ different boxes of ammo to try. Pick the one that you like the best and then stock it up. I spent about 80 rounds doing load dev and practicing with the 165gr CX. Now I shoot 1 or 2 shots shortly before I go hunting close to my range limit. and 1 if I find an animal. that's 3 shots a year for the past 2 years.
Say 3 boxes is $200. Then 3 boxes of the ammo you like for another $200. There is 20 years of ammo at 3 shots per year on a hunting rifle...

I've hunted with many chamberings from 7mm-08 to 375 H&H, went back to the 30-06 as it kills everything. Last few years, my shoulder got messed up with arthritis and I found the recoil too much. I hunt with a Tikka in .308 now, more pleasant to shoot and does the job well.

Wait you're telling me a bigger case can be loaded faster than a case with much less capacity? Just crazy talk haha. People have already mentioned running that weight of bullet even faster from their 30-06s.
The discussion was around how some factory ammo is definitely going to disappoint if its shot over a chronograph and one cannot assume you're getting what the box says, so not sure what you're getting at here, really. Plenty of people here are already talking about loading and shooting 30-06 even hotter than you are.
