The 7x61 S&H is also one of the Schultz & Larsens I have, mine is in a model 68DL.
As Eagleye made mention of, there are a number of readily available cartridge cases you can form the brass from but with a little digging, the real thing is out there. It wasn't cheap but I did happen on to a sizeable quantity of new Norma unprimed brass from Bashaw Sports in AB. Also, there's another guy on this site that has come through for me on some of that harder to get stuff that may be able to help you out. Henry Nierychlo. Give him a shout.
I've just made a deal and sold a fair sized batch of my surplus stuff and a 'modified' set of RCBS dies to a guy in Horsefly B.C. I have a Moose draw for that area and will be taking the 'goodies' up for the guy then. I do have a set of CH dies available but I'll send you a PM for further detailed discussion, including the die modification.
As H4831 stated, it can be a little 'tricky' to load for but as with any calibre you load for, it can be sweet when it all comes together. There was a modification made to the original brass, which I believe was an effort to compete with, at the time, the emerging new 'kid on the block', the 7mm Remington mag. There are a few hurdles but it's worth it.
