Yes - you will instantly be in possession of an unregistered restricted firearm. Minimum mandatory jail term will apply if your are caught.
It is possible that the crown could say simple possession of the grip constitutes "intent" to produce an unregistered restricted firearm.
Much in the same way that they have determined that possession of magazine bodies without a rivet in place constitutes "intent" to construct prohibited magazines.

It is VERY hard to prove intent in a court of law.
By that logic, you could be accused of intent to build pipebombs for possessing matches and a functionnal sink.
The crown's claim could easily be fought by simply stating that you would've registered the firearm as restricted once the pistol grip installed.
So such a charge wouldn't fly. It would at best be a bogus charge so that the prosecutor could try negociating. But anyone with the slightest knowledge of how law works would laugh at that.
Funny how if it had the pistol grip attached from the factory, it'd be fine. Yet slap it on afterward and its restricted. Preaching to the choir here.
