if i had to choose three rifles.

Model 12 VLP 22-250
Rem 700 bull barrel 7mm-08
Model 111 in .300 wm, or BAR in .300wm, or Rem 700 in 8mm rem. mag. (depending on the day)
 
I could make a case for at least a dozen more but.................

Winchester M69 in .22 Rimfire
Because its reliable, accurate and have been using it since 1956

Sako Forester Deluxe in .243 Winchester
Because it is the nicest looking and most accurate factory rifle I have ever owned.

Sako L691 in .338 Imperial Mag.
Because I designed the cartridge, special ordered the rifles and is an outstanding performer.
 
For me:
Some kind of decent .22- this is for plinking and small game, so I would likely stick to a 10/22, probably built with better bits. Alternatively, .17 hmr gun

Medium/large game. I'd stick with the standards- .270/30-06, something similar. If you also want to use it for target/range, maybe compromise to a .25 caliber or similar power

Bush gun: 45/70, 444, 450, etc. light, quick, big bore.
 
Only 3 rifles? That's a bit of a cruel concept but here goes: 'Rifles' means that I don't have to include shotties, so let's start with a .22. How about a Weatherby Mark XXII (because it's on my wish list). Then a quality, extremely accurate heavy barreled .243, say a TC, Cooper, Sako, Steyr, or Mannlicher. Then round the collection off with a very competent 30-06 in one of the above makers with the same specifications - but not the same manufacturer - they have to all be different otherwise it would be a rather vanilla collection. All 3 rifles would have to be wood and blued with very handsome lumber...
