I figured I had some time to kill so I illustrated some of the major differences *Other than the Single action VS Double/Single*
First is barrel design,
the 1911 uses a barrel link that allows the barrel to drop out of battery once it moves in its full range of motion. The link is connected to the frame by the slide stop, which goes completely through the frame, It acts as a pivot point for the link. Here are some illustrations of how the 1911 cycles
The CZ 75 uses a crescent shaped cut under the barrel to do the same task. Thus eliminating a part and in theory making it more reliable. The slide stop has the same job in the CZ 75 but the motion of the barrel is retarded by a cut out in the frame.
Next is the design of the slide themselves. The most major difference you will see is the location of the slide rails themselves.
The 1911 uses a more "traditional" set up where the slide rides OUTSIDE the frame. It also has a bushing at the muzzle, I have simplified the this area on the diagram but it gives you an idea.
The CZ slide rides on the INSIDE of the frame, there are many who will argue the advantage of that portion of the design but I wont get into that.
The CZ does not have a bushing, the barrel fits into the slide and protrudes out a circular hole milled in the end of the slide. For the diagram I used a a CZ-75 SP-01 as that is what I personally have. The 75B does not have a FULL LENGTH guide rod but does the same job of guiding the recoil spring.
Hope that clears up a bit. I could have explained more and made better diagrams but I've had a long day... Feel free to use the images I provided.
