canned moose

I was given some canned/jarred moose and bear years ago.
Oooh mah lawrd it was good.
Get a big French bread and slice it like a chaud chien bun
and loader up.
The goodness is everlasting.
Not to mention filling the void in the gut.
Where is that dang woman anyways.
Oh, cutting up her elk.
Need to send sum roses, not worth much trad'n
power round here.

My brother just bottle up a bunch of rabbit. You add some salt pork a bit of seasoning, boil the jars for four hours then let them cool. They seal when cooling. You do the same with moose, you can add veggies too if ya want. I prefer a fresh fry but it does in a pinch.
 
Make damn good and sure that the can is sealed and "pops" when you open it. Canned meat, while delicious if prepared properly, can be deadly if not as Botulism is a very real concern.
 
I do up a dozen or so jars of moose every year. Just a pinch of salt and a garlic clove...sometimes a quarter onion.
Great for if the wife goes away and I have to fend for myself.
 
I looked into the equipment to use real cans when canning moose and deer. The equipment is not to badly priced but the cans and lids were priced brutal and of course not re usable like a jar. Still very professional looking product that would stand canoe rides and Super Cub landings.

agreed. I have to fight to get the seal off the bottles i eat, usually have to pry them off with a knife, and of couse they go flying across the room.

If it is tainted it will squirt all over who is opening the tin and those in close proximity.
Some will wish they where sprayed by a skunk.
10 years working in a fish processing plant has taught me well.
