canned moose

This is what was left last month for meat and added a couple bottles of stew for the pic (only have 6 of these left, still have to process the cubed meats). We canned 4 doz bottles of moose and venison last year and NONE OF THE KIDS CAME HOME enough times to eat it all. Now there are another 2 dozen bottles done of venison. Luckily, this keeps a long time.
The bottles on the right are fully cooked stews. Cubed meat, seasoned and braised, frozen veg from the garden, potatoes from the garden, tbls of bouillon, salt, seasonings, pack it in, then fill to the bottom of the ring with water, into the canner. Works and tastes wonderful. A qt bottle of stew feeds both me and Shannon a meal, with no leftovers.

The beauty of it is that there is no defrosting time involved. It is a really quick way to have great meals fast. In soups and stews the veg softens up when processed. I like to add more veg when I heat it up. Sometimes I just can the base and fluff it up with fresh veg when heating.
I recommend an All American Pressure canner. Great brand, no gasket needed.

No defrosting, this seals the deal for me. I think there will be a pressure canner in my house in 2014. Need those quick meals when we forgot to take something out of the freezer.

Actually, I had never thought about this before, but it makes great sense. I'm going to give it a go as well!
