223 backpack rifle

That's exactly what what I did. Sure, it's no AR but at least I'll get out and get to shoot it.

If you have an AR-15 sitting, rusting in the safe, you could try a conversion kit to make it a straight-pull bolt action.
This is not what the AR was designed to do, but it gets the parts outside.
I converted a Norinco M4 clone with a Spectre Ballistics kit and my neighbour converted his Smith & Wesson M&P with a Maple Ridge Armoury Renegade kit.
They aren't semi autos but cycle fast and well and the MRA version has the benefit of a spring return. Both worked well with no problems.
Again, not a semi-auto but light and can take down for back-packing.

No, the prohibited part is the AR15 upper and lower which are not not used in the conversion obviously. The new upper and lower are non-restricted. The original AR15 upper and lower are still prohibited (until now at least).

No reclassification for the firearm, as the prohibited remains as the AR, you are only salvaging parts that are legally just metal components. The new build is a NR rifle based on the receiver you purchased (as long as you meet the 26" OAL rule)
You do have to call the CFO and inform them your AR is now a frame/receiver only however, as the old Reg certificate will be invalid due to barrel length mentioned on it (within 30 days of change)

To fit in a backpack, it would need to be a take down or folding rifle.

Ideally I would select a reliable SBR, but the you can't transport a restricted rifle that way.

If you actually meant to say a rifle to carry while backpacking, then anything non restricted will do if it doesn't physically have to fit in the pack and be quick to deploy from the pack.
