Both is always the best choice, if possible. Its like trying to pick between sisters.
I think the only downside here is the availability of rifles with 7x57 chambering, not as many modern rifles available which will limit load pressure if you do find an older rifle.The loading manuals do compensate for this with lighter loads in the 7x57 than the 7mm-08. If you can get a modern , strong action in 7x57 the difference will be minuscule.
To me pick the rifle that feels the best and hope it comes in either of the two.

I'm not a fan of the 7x57 because the case specs show it to be very loose in the neck of most chambers.
The best thing you can do with one (IMHO) is run a 280 reamer into it
It will leave a little bulge around the base of the case upon fireing (because of the loose neck dia) but case doesn't seem to suffer from it. My rifle had the barrel set back one thread so bulge is minimum length. It improved accuracy 100% in my rifle.
