Ar500 and 600 are great material for targets. Ceramic actually captures the spalling so it doesn't cut into your neck and limbs like target stand 2x4s.

I believe they have a coating to help mitigate spalling for a few rounds atleast

The ceramic plates are the superior option based on recent testing. AI Tactical had them tested at National Technical Systems with 30-06 rounds, and the plates successfully stopped two rounds with backface signatures of 41.52 mm on the first shot and 30.71 mm on the second.

Regarding the steel options, the AR 600 plates use a harder steel than the AR 500, allowing for a lighter design while maintaining the same performance level. Both steel variations were tested against two rounds each of 7.62 NATO M80 and 5.56 M855. While steel plates typically have the disadvantage of fragmentation upon impact, these specific plates feature a coating and material design intended to contain splatter for up to six shots.
