I've gone ahead and got my mosin a new stock and am wondering what are the best options for scope mounts on the archangel stock. I'm looking for something that will last I've seen some mounts people talk about them bending and that's not what I want to happen.

I suspect that if you want a rear mounted setup you'll either have to drill & tap the rifle or the stock. I know which way I'd go! Don't believe I've seen a smithless (no drill/tap) scope mount for the Mosin. I have them for Enfields & they're great. Maybe consider one of the side mounted units drilled & bolted to the AA stock? If you went with the side mount, you might be able to get away without needing a bent bolt?
There are non drill and tap. Jmeck or something like that clamps around the barrel shank. Allows regular eye relief scopes. BUT still need a bent bolt. Then theres models that uses the rear sight base but long span of non supported rail.
If you eyesight is still good you can easily shoot to the capability of the rifle to 300yrds without mangling it for a scope. The mount I referred to was produced in Finland during the 70's. Good luck finding one. Every modern one I have seen so far is an abortion of some type or another. My advice is learn to use the irons to embarrass your friends with scopes.
Instead of butchering a 75 year old rifle trying to turn it into a god knows what, why not just buy an actual modern rifle you can put a scope on easily?

A cheap Savage or Remington run about $350 new and would be much cheaper then your setup and will shoot very well.

I know this isn't what people may think is the best but it's just something im venturing in doing as a project I know this isn't gonna be the best rifle I know I could just buy a better rifle out of the box. I'm just looking for advice on mounting options on the Mosin and help with this project I'm under taking.
The fallen angel stock is designed to feed a need people have for "improving" milsurp rifles not for shrinking group sizes. They are not particularly well fitting & leave that skinny barrel flopping in the breeze so you will not see the benefit of a high quality bipod. To summarize, you are about to spend $600 on a rifle that probably won't shoot any better than it does now & you will trash it in the process.
If you really want that rifle to shine, forget all that garbage people are bolting on to them & replace the barrel with a new one.
That rifle is a bit of a piecemeal job. The stock had been sanded, and was kind of wrecked. So I decided to put it in an archangel. And there was no bolt. That bolt is just a random mosin bolt that I picked up along the way. The handle I made from an old bolt, and an empty case. Then I nickle plated it just for fun. (Desporterizer oughta be having a coronary right about now. lol)
The scope I got from Corwin Arms. And the advantage of the POSP setup is you can still use your iron sights as well.
