When you choose to carry, it is a commitment. Like changing your underwear daily.
Was talking to a friend who is down in AZ. He was planning to use his G19 as his carry gun. 30C temp, shorts and t shirt weather.
Gave up on that idea rather quickly. He is now looking for a Shield. He was talking to a gunnie down there and apparently no one carries anything G19 sized or higher.
Unless you’re moving to a frozen State, it may be unrealistic to suggest bigger guns if you plan on carrying 24/7.

As a carry piece, HK P7's are very hard to ignore. I've had all of them except the .40 M10 and convertible prohib versions. The M8 with it's American mag catch and slim grip profile is a great pistol but the double stack M13 is the one for me.
I can get ~3" groups @ 25 meters with my M13. This is way more accurate than the needed combat accuracy of a carry piece.
^^^ If you want better than 3" @ 25y, strictly target pistols speaking, you have to look at a Sig P210-6, Legend Target and Supertarget, Mauser Parabellum Sport, S&W 952's in single stacks. Lots of guns they are but I wouldn't carry any of these on a daily basis.

The M8 is a beautifully made piece of art. I loved mine when I owned one and wish I had kept it still.
However, I don’t feel it’s a good carry gun. It is quite wide due to the squeeze cocker mechanism; it is all metal and heavy which for a gun you carry more than shoot, isn’t a good thing. It is pricey even in the US, so, unless you’re rich and don’t mind some abuse, I would worry about dinging it up. It has a weird balance. Almost like a bull pup design. The grip end tends to stick out and printing isn’t a good thing while CCWing.
It gets warm when shooting lots, although this isn’t a real issue in a CCW situation. It recoils surprisingly hard for an all metal gas gun. It isn’t made anymore so parts and mags may be an issue.
For all it’s shortcomings, I would carry it if it was the only choice I had. It is accurate, super safe, totally ambi and darn reliable. But there are other newer choices for a carry gun now. The OP can shop for cool sub 4” guns where he is going. Modern concealable guns have come a long way since the P7 family.

I would go with my Gen4 G19 for a carry gun myself, I'd rather have 15 rounds.

An alternative to these are the Uncle Mike's or Butler Creek (same thing) hard rubber thin grips but they're long out of production.

Washington is a frozen state for part of the year, I guess it's good to do some homework but you might as well go to a nice gun shop range in Washington when you are ready and see what you like..... lot's of good choices south of the border.
Single stack pistols are a gimmick. Coming from a Canadian who made a similar move, don't waste your time. Get a Glock 26/27/33 or an M&P9/40c. A short double stack will be just as easy, if not easier, to conceal and it will have more rounds in the magazine and accept full size magazines.
Get a superbio belt by daltech and an alien gear iwb holster. With that combo you can literally carry anything. Don't buy a kadex belt, they break inside the leather. A thick leather belt is ok but it'll be twice the thickness of the daltech belt to get the same strength.
You're going to spend the rest of your life fighting against magazine restrictions, why would you voluntarily buy a pistol that only holds 6-8 rounds!?
