So I took my deer into a well recommended butcher this year something I haven't done..well ever. I butcher all my own game. However after doing a Moose by myself, and working alot of OT and then being sick with the flu 3 of the 5 days that I was deer hunting AND knowing that I had a bunch of Northern Manitoba snow to shovel, I was played out. So I took my skinned buck carcass in to be made into Sausage. I got a call yesterday saying that it's ready to eat and all for only $250 bucks:eek:
I nearly shat myself, that's ridiculous.:confused:

Unless you end up with tuck load of sausage that is a royal hosing.
Lets say you brought in 50 lbs of ready to grind deer
add 50 lbs of pork ( Around $1 per pound cost )
Labour to make it should be $1 to $1.50 per pound.

You might want to have that butcher give you a complete cost breakdown. A face to face friendly discussion might lower the bill. At those prices I don't see how that guy will get any more buisiness.

P.S. My family ran a butcher shop for over 20 years. I know what I'm talking about.
 
Depending on size of deer, etc it sounds comparable to the prices in my area.

$50 to butcher it then processing into sausage.
 
Just picked up a whitetail doe for my brother. Cut and wrapped only. $38.75 total bill. They charge .45 cents a pound to cut and wrap. I believe that when we priced out sausage it was about 150.00 per animal?
 
I just had one done. Its $50 here to cut up/debone and wrap a deer. The sausage was $2/lb. My bill was $225.

If I had de-boned the deer myself I would have saved $50. If I didn't want most of it in sausage, I would have saved $175. But I did, so I paid. Butchers are no different than anyone else, they need to make money. Sausage is time consuming.
 
last time i did my bear (120 lbs of bear,) it took me and a friend 6hrs, 140$ in extras; pork, beer fat, onion, cheeze, hot peppers, bacon binders casings etc etc) that time also includes wraping in freezer paper and bagging it too.

sausage takes alot of work, especially if you want GOOD sausage. Id be happy to grind up all the crap into your sausage, but a little time spent trimming off sinue and cartalage etc makes for a better mix.

ps i work as a butcher too, i dont do wild game. but i dont think that 250 is a rip off. next time do it yourself if you dont like it.
 
I guess because I have always butchered my own meat, I never really had to pay those prices. From these posts it sounds like it was an average price. I still think it will be the last time I send it out for processing though. But it is tasty yumm...mmm...munch..:p

Boy have I been out of the loop. Maybe I should go back to cutting meat. At the old shop I could easily get 3-4 animals done in a day by myself. For $300 plus per animal thats not bad gravy.
