Canada Goose....eatable or not

I recently had a conversation with an avid bird hunter who said he and his friends never shoot Canada geese as their meat is 'undesirable".

He was putting this forward as a known fact. I realized that I have never had Canada goose meat, but have always assumed that they are desirable game. I would appreciate your thoughts

When I eat it, I keep finding these little steel balls in the meat.

Other than that, tastes great. I usually eat it slow oven roasted in a tomato based stew.
 
There are hunters out there who think venison is unedible.

I tend to think these are people who dont handle the animal properly from field to table, and cant cook worth a damn.

Nothing grinds my gears more then a "hunter" who treats an animal like #### after the shot and then complains it doesnt taste good. Like no wonder it tastes bad after you didnt gut it immediately, dragged through a swamp, didnt cool it down, and hung it in warm temps for a week. Go figure.
 
I think the knowledgeable ''Avid Bird Watcher'' is a palate for kale flavored tofu.
Now that is something that is undesirable if one where to ask me.
Now, 8-10 pound Canada Goose, plucked and drawn.
Soak in slated water to help remove blood from meat ( from steel shot pellets)
Dry and rub with spices of choice, add some olive oil to pan and roast till done .
Remove from oven when skin is golden brown and other tests for donenes.
Slice and serve with veggies and gravy and of course garlic mashed spuds...the purple Russian spuds are great btw.
Wash down with fav. Red Wine.
Now to go search the freezer for some goose...Canada Goose that is.

This thread is immortal or something.

There are people who think geese and diver ducks like goldeneyes are no good. I've even heard people hate on wild turkey. More for me, I guess.

He's full of sh*t or treats his birds like sh*t.

Canada goose is my wife's favorite game animal above all else, and we've eaten all variety of ducks, grouse, pigeon, deer, moose, bear, wild boar, beaver, raccoon, squirrel, snowshoe hare, feral rabbit, European roebuck and elk.
 
Cut a goose and a supermarket turkey each in half, put a half turkey with a half goose and cook the two together.
 
Those that say it is not edible are probably not preparing or cooking it properly. On the other hand it will not taste like the BLAND CHICKEN you get at the grocery store. I know pheasant hunters that give their birds away because they never figured out how to cook them.

My experience with eating goose over many years is this ;
1 - In the beginning I roasted & found dry & tough . Maybe I did not do it correctly ?
2 - Latter I cut the breast meat into thin layers & pounded with meat hammer .
Then coated with seasoned bread crumbs & fried in oil ,,,,,,, a schnitzel I think .

#2 was great . Tasty & tender enough .
3 - Recently ( last 2-3 yrs.) the schnitzel has not worked at all . Unbelievably tough
so I had someone make sausage & that was not great either .

Maybe I am not a good cook ?
 
Canada Goose is rich, natural and somewhat disgusting and delicious. If you don't agree, then go to McDonalds. I will eat whatever food is presented to me as I grew up on a poor farm where we never questioned what we were given to eat. IMHO, food has to be respected, not questioned.
 
This is super bizarre... my family is from PEI & Newfoundland. My pops would come up to PEI every fall to go geese & duck hunting. Everyone would pray he'd come up with far more geese than duck. I thought all hunters would love some good Canada Geese?!

We'd eat them in plenty of different ways and I remember them being delicious no matter which way they were cooked. I particularly liked them roasted though from what I remember, with some nice gravy. Inevitably a little dry but a delicious gamey taste if I recall correctly.

Ever since getting to Ontario I've been so annoyed seeing the little buggers everywhere I walk knowing they can't be hunted in Ontario.. I wish I could find some in SW Ontario that I could eat!! You'd never see geese in the fields or on the ground back on PEI, they knew not to even bother trying to come in for a landing.. just try to fly by as quick as possible without getting shot down!

Best goose ever are the ones from Stanley Park and the PNE grounds.
Taste like hot buttered popcorn and candy floss respectively.
