coots and snipe

I've noticed in my annual hunter's guide that there's a daily limit of 10 snipe&coots and was curious how tasty they are. Is it worth shooting them?
How about sandhill cranes?
 
There is no season in Ontario so I can't comment first hand, but they call Sandhill cranes "Rib eye in the sky". Never tried coot, snipe, gallinules or rails.
 
I had coot gumbo for supper tonight. It is good if you don't keep the skin and strip off the fat. Snipe taste wonderful, full flavoured but not "muddy". Snipe are the ultimate wing shooters challenge. I have never met anyone who shot a limit with a box of shells. I hunt all the migratory birds, they are all good, just different.
 
Longwalker is right on. Coots, while not very challenging as a target make great goulash dishes. I make a deadly chili with coot. They do not taste like mud. Gumbo or any sauce based dish will work with coots. I shoot cranes in Manitoba and they are VERY good. Just have to get your head around the 3 foot long neck and legs.

Coots are good eating.Here is a good recipe from away back tried and true. Pluck and clean the bird remove the breasts and legs. Skin the meat and marinate 1/2 hour in soy sauce in a zip lock bag.Remove from bag and place on a wet plank the same as for fish.Turn regularly on the board while on the barbecue. When done carefully remove the bird from the board,throw away the bird and eat the board.Quite a fine meal indeed.Done many times in Saskatchewan.

I'd eat coot anytime ahead of greater scaup. Skin them and add some garlic and herbs and there is nothing wrong with them. it's like the difference between woodduck and merganser - some like em some do not. Meat is meat.
 
They call Sandhills "sirloin of the sky". Well I have never eaten a sirloin that tasted the same as a western slough smells!!! Had Sandhill last fall for the first time and it was IMO absolutely disgusting. They get a free pass from me, I'll shoot them with an SLR camera instead. Coot is not bad but you need to skin them and remove the fat. Never had snipe. Never shot one either to be honest.
 
I cooked up a couple coots that some a-hole sluiced and left one afternoon. I skinned them, then dusted in flour, fried and finished in the oven. They tasted just fine to me, and my wife (who is moderately picky about game) said "you should shoot some of those". I would shoot more, but I can never catch the little beggars flying! They just swim past, or run along the water.

Snipe are good IMO. Dark meat, and fairly dense. If not over cooked, they are good.

I find most people who spout off about rubber boots, or cedar planks, have no clue at all. Or, they have only ever had someone else cook for them.

Actually they look more like a 6ft. step ladder being thrown from a helicopter when they come down. The correct term for describing Sand hill Crane as table fare is "Ribeye of the Sky" they are excellent eating. They do have a musty crane smell when shot but that does not carry over to the meat when cooked.

Snipe are good eating. Can't say much about coots.. no sport is blasting them off the water. A friend did try one and was not impressed. I had crane once; it was OK... somewhat undercooked.

If you do shoot snipe, make sure you're actually shooting snipe and not some other shorebird! If it flies in flocks... probably not a snipe. If you see it on the ground before flushing... probably not a snipe. Not that the other ones aren't good eating; they're just not legal.
 
coots are really tasty . They make you feel hot too. i hunt them on my property which has miles of un inhabited area ahead of it . I hunt them with subsonic 22LR . Often i hit them while they are on the move , such shots just make the shooter happy . (I live in Asia )

Sport? Huntin to me is not sport, it shouldn't be to anybody if you think about it. It should be about goin out to get game to put on the table right? At least that's how it was taught to me, but it was necessity when I was younger you relied on that wild game and huge garden that took up the entire back 40 for yer groceries. So ya I shoot em on the water I hunt for food doesn't mind me none if they're flyin, swimmin or sittin on shore.
