Eating a coyote would be like eating a dog. Plus they eat rotten dead stuff all the time. Probably pretty nasty to eat.
Nope I have not. It was a bit of a loaded question I suppose, I've never hunted coyote before, and I'm a firm believer in if I search-it-out and shoot it, then I eat it. Essentially, is it worth taking a weekend to go out and find some coyotes. General consensus now is no.
I've been in China, and it is pretty popular fare in several areas of that country.
Additionally they eat dogs in several other Asian counties.
I'm not tempted to chow down on Coyote any time soon, but I'm sure some would savor it.

Not much besides birds will eat a coyote. I've seen other coyotes messing with the bones of others, and shot a sick mangey pup that was chewing on what turned out to be a old coyote leg and foot. We had a bit of a informal test where we had a dump-site for carcasses including bears and heads, hides and bones. Inevitably the bears would have everything cleaned up by the next morning, but they wouldn't touch a coyote. Ravens and eagles weren't so picky. If a bear won't eat it, I won't be trying any time soon.
