Custom rifles are great, especially if you cannot find what you are looking for in a factory rifle. Just be prepared for the cost and the delivery time. If you are prepared for this, it can be a rewarding experience!
Have you looked at some of the premium firearms available from the boutique rifle shops? Quite often you can get what you are looking for for less than what a gunsmith is going to charge for a custom build. (Proof, Fierce, Alterra, Christesen, etc.)
When it comes to the stocks you are mentioning; have you handled, shouldered, carried or shot a rifle in any of these stocks?
Suggest doing so before buying or building on these platforms, as you may find that they do not feel as good to you, as to those who have written about them. It may mitigate buyer's remorse, if you've not handled a chassis rifle at all. If you have, great! You know what to expect. (Just see a lot of these for sale and wonder why...
In the end, just be prepared that custom does not necessarily equal accuracy, as no two rifles will shoot the same bullet or ammunition to the same degree of accuracy.
That being said, quality components, assembled by a good gunsmith using best practices, should net you a firearm capable of good or better accuracy.
