Deer liver is good

The day after I shot my first moose we had three cast iron frying pans - one with a pound of bacon, one full of onions, and the other with lots of liver. Four of us ate it all!!!!
 
Soak them overnight in the fridge in salt water, drain and peel off the membrane. I like to slice them into 1/8th inch slices, coat in seasoned flour and pan fry.
 
Liver is great, just dont eat it when the animal is in the rut. Very strong.

For those people who are skeptical about game meat. Soak it in buttermilk instead of 2% milk. It does the trick.

I enjoy venison just the way it is though.
 
When I was a child and that mom not observing being occupied at the oven I gave the liver to the dog which was under the table. At least one family member liked the liver...

Boil and grind with spices and oats.

Stuff into a stomach, Dam fine eating.
 
Is it just me, or wasn't there something in the regulations 6-8 years ago in Ontario regarding consumption of the liver and heart? Suggesting not eating it for some health reason or another?

Personally I avoid organ meat altogether, not interested in eating blood or urine filters, but to each their own.
 
When I was a kid, I LOVED liver and onions. However I then took a physiology course and that was the end of that. I know it's been said before, but eating the organ that is the filter for the rest of the body doesn't make any sense to me. All the crap that is consumed is filtered out by the liver like a big sponge of environmental toxins. My last dog was with us for 11 years, and every year I got a deer, I offered him some fresh deer liver. Not once did he eat it. I figure if he wouldn't eat it, then I shouldn't either.

There is also concern, at least in Ontario, about cadmium in the liver of deer. Not sure if there is anything to it or not.

Liver anyways due to cadium. Look for white spots or something. I pass. We have it at moose camp if we shoot. I eat a lot of bacon and onions.
