When I was a kid, I LOVED liver and onions. However I then took a physiology course and that was the end of that. I know it's been said before, but eating the organ that is the filter for the rest of the body doesn't make any sense to me. All the crap that is consumed is filtered out by the liver like a big sponge of environmental toxins. My last dog was with us for 11 years, and every year I got a deer, I offered him some fresh deer liver. Not once did he eat it. I figure if he wouldn't eat it, then I shouldn't either.
There is also concern, at least in Ontario, about cadmium in the liver of deer. Not sure if there is anything to it or not.
