The weight will depend on the composition of your alloy. More lead = heavier bullets, more tin or antimony= lighter bullets. Wheel weights will produce lighter bullets than pure plumbers lead from the same mold. As cast diameter will also change with the alloy composition.
 
Joint lead is always pure.Samples I got my hands on were covered with some kind of paint/coating that smoked horribly.
 
lead pipe is generally pure lead, if you have lots of soldered joints it will be a bit harder but not much. need to add some tin and antimony to harden things up and get the 370gr weight your looking for.
 
Not all molds are exactly the weight that they advertise. They will vary depending on the maker and a few other factors. I don't worry too much about the weight too much as long as it's consistent.

As for the lead from the old sewer lines, keep the joints separate from the pieces of pipe. They've got high tin content: very nice for mold fillout, but doesn't give very high hardness numbers over pure lead. Keep it and use it sparingly for when you aren't getting good mold fillout, and drop in an ounce or two into the melting pot. It will make your boolits look way purtier. And it's cheaper than having to buy tin in solder from the hardware store.
