The FAT has 20 inch tires with 8 bolt rims, and a mid-mounted winch, and are based on the 3 ton (60cwt) chassis. The Heavy utilities are a much lighter truck, based on the 8cwt. But they are all Canadian Military Pattern with a high degree of interchangeability between the various vehicles. As of about Dec of 41, all featured the distinctive Canadian cab with the forward sloping windshields. This is what I was thinking it may be.

It will be a HUP or one of it's variants (ambulance, personal or workshop lorry. )
I'm told by the owner that it is being restored as an HUW (Heavy Utility Wireless).
What is the pump for that is on the driver side front on the engine? An air compressor?
