For me it is the 280 Remington.
Gotta say I have really enjoyed hunting with my 6.5x55, 375 Win and 358 Win over the years too.
And then there is my fondness for my 338 Federal rifles now too.
303 British for many, many years. Always had one even when I was actively wildcatting , and even now although I have a 260 and a 280 , my goto is still my custom built ( yes it is a complete custom!) in 303 Brit.

Especially locally with some of our brush and closer range situations, I have a couple of lever guns begging for field experience. A Marlin GBL in 45-70 and my favorite lever gun/calibre combo, a Winchester model 71 Deluxe in 348WCF.
.300 WM for me. Have had hunting rifles in many other chamberings over the years that have come and gone. The .300 WM had remained my safe for 25 years now and will never let go of it.
45/70 my late grandfather who taught me how to hunt called it an all around game getter and the guns chambered for it a meat gun. Here in eastern Canada in the early 1900s it was his favourite cartridge for moose. When I started deer hunting he convinced me to buy a gun chambered for 45/70 this was back in the mid 70s and I have had at least one gun chambered for it since.Currently I have three chambered for it.Though not a long range round if it is used within it s range limitations the 45/70 will not let you down for deer ,moose or black bear
30-06 has been successful for me on every game animal I've pulled the trigger on. I've carried a number of other calibres but haven't had the luck to run into my quarry and give a more informed opinion.
A wide number of rifle calibres have more than enough oomf to get the job done, I'll typically use a couple different rifles during a season depending on the ground I'm hunting. Lately I've been carrying a 338 Win Mag when I'm hunting areas with wide open spaces or sitting on stand. If I'm wandering through the brush or in the thick stuff I'll usually stick with my Ruger Scout in 308 (fantastic hunting rifle). Every once in awhile I'll grab my M1 Garand or my Marlin 45-70 to sub in just because.

I’m enjoying 6.5x55 this year as well. I bought myself a 1941 Swedish Mauser , been carrying it bear hunting a few times this spring and also put a few boxes through it in the bush to check the sights and get used to the gun. Really nice shooting cartridge.
