field dressing knife

Honestly for just field dressing, any sharp knife will do. I prefer about a 3.5" blade folder or fixed. I use a bemchmade steep country most of the time. Even a 3" victornox paring knife (4 for $30) does a fine job field dressing. A lot of folks like the replaceable blade knives but I'm not a huge fan. They have their place but I typically don't like disposable items and I like sharpening knives.
 
I use an Outdoor edge with replaceable blades, but also carry two others with me.
A Benchmade Barrage and a Custom knife I designed and a knifemaker I know well
built it for me. The Barrage has the best steel to keep an edge [M390], but takes
a bit more effort to sharpen. Dave.
 
Here are my favourites. All have 3.25” blades or shorter. All have dropped points, and all retain an edge extremely well.

$3-4 PC brand paring knife, holds a great edge and is nimble and thin enough to separate joints. If I loose it I don’t worry about it, they come in bright colours and are easy to see if you set it down in the bush at dusk.
 
I generally use a fixed blade, 3.5" long. I also have a Puma Skinner which I also use, good for deer and larger animals.
 
Mora craftsman Pro C is my go to.

Nice grippy handle, short blade with a good amount of belly for skinning, and robust enough to pop ball joints. Best part is they're stupid cheap for how good they are.

I also carry a havalon piranha in my bino harness. I really like the option of a scalpel-sharp knife and it is super light weight. I don't go anywhere without my bino harness when I'm hunting so this way I'm always prepared. The Mora is my go-to for big game but I really like the havalon for ducks.

I have two of these and only use them in the kitchen because mine don't hold an edge for long
are there different SKUs that work better?
