First large caliber bolt rifle.

I only say easy to find ammunition because my buddy has a rough time getting ammunition for his .270 and I have an even harder time finding quality 22-250 ammo. I'm not saying i'm taking 1000 yard shots every day I just like the ability to be able to try it. That being all said I think I'm going to go with 7mm as I keep hearing good things about it.

7rem is a good choice, what rifles are you looking at? Do you reload?
 
I really like the 7mm Rem mag. Lots of Ammo selection. Great ballistics. For wanting consistent shots at 1000 yards I would suggest reloading as you can tune the round to your rifle.
 
.308 for what? He said he'd like stopping power at distance.
exactly, lots of people here are not taking into account that the OP's primary use of the rifle is going to be hunting.

Unless you only plan to hunt small game in fair weather and on flat land at 1000yds you will need a large caliber that is more forgiving in wind and other adverse field conditions you can not control.
