you can get an ambidextrous safety for 1911s. I haven't found the mag release or slid release to be a problem -- both actuated with my index finger of my left hand.

NAA has it right. A buddy is left handed and he shoots better than most right handed shooters and his pistol has the mag release and the slide lock on the left side. Its called training, get some and stop worrying about the setup.
