Game Haggis?

Well now that recipe has me thinking.
I don't have the liver and heart, but I can not see why the recipe could not be converted to a sausage. I will send it to my sausage maker. I have had haggis before, and when I returned to Canada in 1969 I brought two cans with me . . . we probably did not have enought beer and scotch whiskey to make us truly appreciate it.
 
It amazes me that the same people who will eat hot dogs turn up their noses at haggis. You will note in the deer haggis recipe given you can identify the ingredients.
 
Let's face it the Scots are not known for their cuisine.
But they are the Tallest people in the world .:p
Next deer I get I'm gonna save the liver(I usually save the heart )and the stomach .
That recipe's ingredients, above, don't look too much different than some of the sausages that I've made.
We had boiled deer tongue with our supper last night ....was very good.
Yesterday I saw a lot of recipes on the internet for Haggis while surfing for a recipe to refresh my memory on how to prepare deer tongue .
 
just make sure you clean the stomach really good
salt them sit them in water and let them sit over night and clean them again
made them many time :) any other question feel free to ask :)
YellowknifeDaves' recipe calls for 2 or three deer stomachs...one stomach looks big enough to hold about 3 gallons of stuff...or do you use one of the other smaller stomachs....don't they have three?
Care to post your recipe....or is it similar to YKD's ?
