Your right about a couple things. They are cute and they are light, but we have to admit for what it is, it is a great gun. Jack of all trades if you ask me.
For $1100 you can get a Beretta Storm carbine. Which in Canada you can have converted to non-restricted.
Easy choice.

Have any of you guys any used this, or any of the other stocks on the market?
I have the Fab defense one, and fully collapsed it would take out your eye. But then if you adjust it, its almost too long for my arms at its furthest adjustment, and your face is over a foot away from the slide.
I usually pick a setting at the midpoint, which by the looks of it you could do with the adapter in the topic at hand if you just adjusted the stock to be further out. no?
How's the sight alignment with your face so close to the gun?
Easy choice for you cause you don't own any glocks, but plenty of us have several, plus lots of AR parts laying around, which would make the total cost $155 rather than $1100.

a SMG is a full auto in a handgun caliber. Take the standard m16 in 5.56 a machine gun, put a 9mm upper on it and it is now a sub machine gun.
