....that is impossible to find a gun manufacturer willing to put a decent barrel on a wooden stock. Not to pick on Browing but they offer a 308 Hunter with what they say is a 'regular' barrel, 22 inches long. They also offer a Varmint Stalker and Varmint Special with a 'heavy' 24 inch barrel but only in a laminated or plastic stock. Every manufacturer has the same thing....heavy barrels on plastic stocks. Personally, I would like a 30-06 with a wooden stock and a medium-heavy, 22 inch barrel...for hunting. Do I have to build this sort of thing and where would I start?

I have an X-Bolt Varmint Stalker, it's not plastc, it has a Duracoat finish on it, what's underneath it might be though. But I would take it over any wood stock. Although I'm not a fan of wood anyway. It's unlike any other plastic stocks I've handled, mainly Remingtons, Savages and some Tikkas. I've had people comment on how suprised they were on how much they ended up liking the feel of it. You should handle it, my X-Bolt is a surgical tack driver.

It's a coated plastic stock, and the coating sometimes starts to peel off.

Not that I don't believe you, but can you show me a link to where you saw that? I've read a fair amount of reviews on different X-Bolts and have never come across anything about that being said. I'm interested in reading about it and a quick search I did yielded nothing.

No, I have NOT noticed that. But then I only collect Sako rifles. The information below will give you what you are looking for...
the Sako Model 85 Varmit, with WALNUT stock, 23 5/8" heavy barrel:

As well as the usual varmit calibres: .204 Ruger, .222 rem, .223 rem, and .22-250 rem ...
this rifle is available in a wide range of hunting calibres including: .243 win, .260 rem, 7mm-08, .308 win, and .338

You know you want one ... =)

Were you searching for "Dura coat", or "Dura Touch" which is what Browning actually used to coat the X Bolt Stalker? Try a Google search using the term "dura touch peeling" and you will find some reports. By the way, many of the reports will be for the Dura touch applied to Browning or Winchester guns other than the X-Bolt, because they use the same Dura Touch coating on many different models.

As for the stock being plastic, simply removing the action from the stock makes this very apparent.

My bad, I always say 'Duracoat' as it's a more common word than 'Duratouch' for some reason... I have no intention of removing the stock just to take a peek, but I'll take your word for it anyway. ;) I figured it would be some kind kind of plastic/ synthetic anyway.

Upon looking, it seems like it's happened in rare cases. People have commented in threads I read else where that they've owned a few rifles with Duratouch and haven't had that happened at all, even after the rifle has taken a fair bit abuse. It also seems that Browning has recoated ones sent back in for repair without hassel. Good to know for me, thanks for the heads up!
