308 with 168's or 7x57 with 175's. Both will be fine. No need for large magnums.

It was some black bear from a guy from church. It was awesome. They don't hunt bear much here but we have a few.

Good for you! I had tried bear years ago and found it very greasy with a strong taste and it wasn't until someone from our church cooked some of their bear meat that I changed my mind. Last year I took my son-in-law for a spring bear hunting for his first time hunting and he got a nice sow. It was delicious and we gave some to a few people at our church as well. My daughter rendered down all the bear fat and uses it to cook but also made soap from it. When my mother started using the soap some of the skin conditions on her hands cleared right up.

to avoid that taste you need to avoid your meat to touch the hair while skinning it. for the greasy part the grease is not in the meat like beef or other animals so easy to remove as well.
yes grease from bear is known to help people with skin issues.
Never ate grizzly meat, but have enjoyed blackbear roasts and pepperoni over the yrs.
I also find people try to treat it too much like beef. Aside from the trichinosis risk, bear is best when seared then braised, smoked, stewed, or used in any other slow cook recipe. It's so flavourful and even after hours of cooking retains its texture.
The fat is incredible to render and use for cooking for sure. I've heard the same about skin benefits from natural soaps.
Such an incredible species. Love the bears!
