i’m interested in what’s available in low power variable illuminated hunting scopes. Has anybody got recommendations? I’d like to keep it below $800.

Leupold VX-R scopes with the motion sensitive Red Dot are very nice. Good glass and the red dot has adjustable intensity so it works in dark or bright times of the day and it's motion sensitive so it powers down when not being used.

A used leupold fire dot would fit your budget.
I just ordered a bushnell forge series 1-8 with a German 4 style reticle and illuminated center dot.
It was on sale for $525 at northpro so I thought I'd check it out.
It's heavier then the leupold low power variables and has 34mm tube and supposedly decent glass.
We will see... :)

i read 30mm for the tube ... but 34mm for the rings my bad.

I highly recommend the Leupold VXR 2-7x33. I don't know the price, I managed to find an excellent used one fairly cheap.

Being able to go to 2 power is really nice and you don't really need more than 7...

I’ve got a 1-7 Sightron with an illuminated Center. My only complaint is that the exposed turrets are not locking. The things that you think of after getting bite by them...

If you can find one, I highly suggest Zeiss Conquest DL 2-8x42 or 1.5-6x36mm. It has a very fine and bright dot for day and dusk (reticle 60 wich is like German #4 but illuminated), and has Lotutec hydrophobic coating. It is made in Germany. Best scope I had for the price (it is discountinued, so you may find one around your budget or get a used one).

Before I purchased the NF I seriously considered the Kahles 1-6x24 instead. One report about it coming apart under useage scared me off and the thought of long turnaround for repair possibly during a hunting season. The optics clarity of that Kahles was something else.

2 Vortex Viper PST II 1-6 scopes just arrived. One for my Ruger Scout and one for my straight pull 6.5 Grendel.

The reticle isn't illuminated, just a red dot in the middle of the crosshairs. I think this system is excellent for hunting situations that call for a LPVO. You have a daylight bright red dot for fast close action and the anility to reach out much further with 6X.
