I used up to 3 layers when the weather got cold, hunting south of Moose Jaw.
When the weather was reasonably nice, either a set of surplus flying gloves, or rag-wool knuckle dragger type gloves, with the fold over mitt end. When the weather was a bunch colder, I had a set of wool combat glove liners, basically a tight-knit wool glove, that I would wear under a set of the rag-wool gloves.
When it got below about -20c and the wind started blowing, I had a set of wool lined leather mitts, that I wore over the combat glove/rag-wool mitts. I would generally keep the mitt on the left hand, and the right one was tucked into the pocket of my coveralls, so I could pull my hand out and use the trigger with a warm hand.
My hands would be wet and cold, if I wore a set of latex gloves. Ugh!
Nevr been bothered by a bit of blood on my hands, and when it was cold, the carcass and guts were warm, at least for the time that I had the gloves off.
