A 7mm rem mag will fill the bill very nicely.
My long barreled 7mm rum is about as flat as they come. 4.9 moa puts me dead on at 500 and 15.5 puts me dead on at 1000( these are not calculated but actually POI). Of course I am putting out a 162 amax out at 3600 fps( 91.2 grains of RL25).

I'd say something in the .25, 6.5 to 7mm area , pick a chambering and loader up and have at it.
To pick just one.
.270 WSM would be flat and plenty enough jam for what you are looking at IMO.

you dont need flat and LR shooter for 500m.
go buy any rifle and decent scope for that range and you are good to go.
1000+ yards its different story. your budget and style of you build. benchrest, tactical, hunter, or whatever your mind is set on.
for 500m deer i would just use 308. cheap and effective. Cheap to reload or tons of factory ammo available.

I smell something foul here.
162 A-Max with RL25 on 7MM rem Mag... The max powder will be at 69.3grains of RL25 which you could go over a grain or two depending if your brass is showing plunger marks or not.. 91.2 grains of powder.... is somewhat in ball park with "300RUM" which i have. Mine
will push 165 A-max @ around 3400FPS with 96.4grains of Powder....

Nearly any legal rifle will kill deer to 500 yards. Worry more about the scope than the rifle.
