What is the name for this style of cheek piece?

The custom Sako buttstock has a slight hog back ("Schweinsrücken")
and a Bavarian double fold cheek piece ("Bayerische Gewehrschaftbacke.")
It also has a birds-head grip (“Pfeifenkopf-griff.”)

A great rifle and a great restoration project for a lucky someone.

"The 11.2 X 60 SCHÜLER (MAUSER) was based on the 11.15x60R M71 Mauser military cartridge and utilised a rebated rim which is the diameter of the M88 Mauser. The cartridge was produced from about 1904 until WW2. Headstamps of D.R.G.M. represent the actual rimless rebated case type that was the subject of the German Patent D.R.G.M 239127 granted on 31 October 1904. D.R.G.M or Deutsches Reiches Gebrauchs Musterschutz means protected patented design under the Reich Government. August Schüler was a German gunsmith from Suhl and he utilised the rebated rim in some of his cartridge designs."

^ is it worth the price? Does it “ handle like a rifle” like a CZ / BRNO ?

Looks great

That Otto Bock gun must have been something else when it was new. Had to google the chambering but it did not help much
 
I believe Steyr only made a short run of the fullstock version though you could contact noridic marksman to see if there are any still available
