I'm going to be selling some of my milsurps and want to put them on EE for a price that includes shipping. I've never shipped a rifle before and was wondering roughly how much it would cost to ship one to, say, BC from Ontario....
I'm looking at shipping a M305 and Israeli Mauser....

$35-$50 normally, depends on overall dimensions and weight. If either address is “rural” also has bearing. CanadaPost has a rate calculator, enter dimensions, weight, and postal codes. It’ll give you a very close estimate.
 
Pack them well so they dont move around in the box, they measure the box dimensions AND weigh it, so I usually try to make the box just the right size and no larger than neccessary. Most times that extra few inches adds a few extra $$$$$

One doesn't need any receipts for insurance, what you declare and pay for is your insured amount.
If you do things right shipping will cost 35 to 40 from bc to on, on line calculator is down to the point. Sometimes post office clerks mess up and charge you more, so if you ship at least once per month get yourself Venture card and prepare shipping orders online with discount, free 100 insurance and free upgrade to expedite shipping. All you need is computer, scales, ruler and printer.

I am curious about your first point that you do not need receipts. So, I mail a Spanish 7.62 conversion purchased from me for $300 and pay to insure it for $3000.00. It does not turn up at the buyer's address; Canada Post and their tracking system appears to have "lost" it. What amount do you think I would collect from Canada Post?

You would collect 3000 after some time required to make sure parcel is indeed lost. Because you PAID for insurance, not just declared the value.

I am thinking that life has a few surprises in store for you - almost every insurance coverage I have ever dealt with is for indemnification of actual loss. If you have bought a home insurance policy for $500,000 coverage on a house worth $50,000, when it burns down (an insured peril), you will collect what you can prove you lost, not what you have been paying premiums for, life insurance excepted.
