Moose Burger

Well.....I've come up with a dandy mix consisting of 21lbs trim,3kg of Costco ground pork + a lb of hickory flavoured bacon. Added a 750gm bag of Charburger /High Caliber Products seasoning binder and the prescribed amt of H20. Pressed out about 50 + 1/2 lb Flintstone patties and froze them with wax paper between each one. Zero shrinkage on the BBQ 10min per side at 400F add cheddar to melt and serve. [ with the -26 C weather the cook may or may not have experienced shrinkage] Don't worry no selfies.

You FORGOT to poste a picture with that burger, and don't forget to include your feet, as most do, with the toe nail fungus.

My moose from last year was a very small tasty alfalfa fed bull. The burger is only mixed with hys seasoning salt and black pepper I don’t find them dry as we don’t over cook them. Here is what I put on them. Cheese slices, hot pepper rings and sawmill steak sauce and they are delicious
 
I like pan fryng venison burgers in bacon fat
Had Blacktail burgers for dinner..... no fillers or binders just some spices.
My go to burger spice mix for venison, moose, elk ect..... crushed rosemary, granulated garlic, onion powder, salt, coarse black pepper, ground cumin and a pinch of cayenne and as I said... no binders or fillers.
Now sausage is another thing altogether but for burgers....... just meat and spices..... anything else and it may as well be sausage.
Agreed, if I use anything for a binder and that’s a big if. It’s an egg from our chickens, otherwise it’s ground venison or beef from a friend’s cows we buy from him.

I’ll add smoked bacon to the grind when I make snowshoe hare burgers but rabbits need to have some fat in the mix.

Here’s some rabbit burgers and sausages from awhile back, only had mediocre buns at the time but all the lettuce, tomato and onion is from the garden. I gotta make the effort to go rabbit hunting this season, we do a meant rabbit breakfast sausage.

My wife told me very early on in our relationship that she never wanted to see me bring a bunny home from hunting LOL
She's okay with everything else and even hunts herself but bunnies are off the menu at our place.
Sucks because I really enjoy a well cooked rabbit/hare.
The only time i get to eat them now is on my solo hunts if I happen to bump into some.

Just gotta find an off site location to process them haha, once it’s in patties or links she’ll never know what it is lol.

I wish they were bigger around here, would be fun to get a big 2-3 lb rabbit. I’m averaging 3/4-1 lb bone in.
 
Venison burger with added pork is ruined in my family's opinion.
I'm another guy who freezes chunks of meat to be ground immediately before cooking.
