Oh i can't wait. Squirrels are doomed

The eastern squirrels are larger than the western ones.
But the tiny reds are so cute and curious. They always want to get in my pack :)

In Ontario, red squirrels are protected as furbearers and cannot be hunted, they can only be taken under a licence to trap. They huntable species are grey squirrels (both grey and black colour phases) and fox squirrels.

I remember the 1st 1 I ever shot. Was 11 or 12 out hunting with my dad. I shot my first grouse that day as well. Anyway we seen a big fat black sitting up in a tree. Dad said for me to shoot him. I questioned him on why. He said that they were very good. I thought he was crazy, and theirs no way I'm eating a squirrel. Anyway, I shot him and dad cleaned and skinned him out right there.
That night he cooked the grouse and squirrel up for supper. I was quite hesitant, but after that 1st bite, I was hooked.
I've shot I don't know how many more over the years since that 1st one. Still can't get my wife to try them though.
Oh well, more for me. Lol

Same thing in NB, the reds are protected. There is no season for greys, maybe because they are mostly urban dwellers and not commonly found in the country.

I ruined a couple trying to fry them in the past, maybe one day I'll get it right with more practice.

I forget numbers, but deep frying at 350-375 for 10 minutes seems to be in my head. Easiest way is to use a meat thermometer and cook to 165 internal or so and let rest to rise over 170. Anyone who has deep fried plenty of chicken wings will have an easier time as proper oil temperature and cooking time are what it's all about. If you toss in the 5 pieces of squirrel (4 legs, spine/loin from ribs to tail, toss the ribcage) at the same time you'll need to remove the front legs first, back next, and the two backs legs last.

i love going out squirrel hunting. its not as easy as people tend to think it is. these critters are tough. require a head shot for good clean kill. i use a good 22.
the only problem is that the season overlaps other hunting seasons which take priority for me, like deer, ducks etc... so by the time im done with those i find myself pressed for time to get out for squirrels. before the end of December.
a good book for cooking is this one here

This is the same as BC with the exception of fox squirrels, don't think we have those here and not listed in the regs anywhere.
